Eating alone? Don't resort to beans on toast when you could have a nutritious, delicious supper in ten minutes
Ingredients
- ½ avocado
 - lime
 - red chilli , finely chopped
 - bread , thick slices, toasted
 - sardine fillets, grilled fresh, or tinned
 - rocket
 - olive oil
 
- Mash the avocado with a squeeze of lime, some chopped red chilli and season. Spread on thick toast.
 - Top with the sardine fillets then scatter over rocket and finish with a drizzle of olive oil.
 
Posh mushrooms   
Heat some butter in a frying pan then toss in 2 handfuls of mixed sliced mushrooms. Cook on a fairly high heat until they are softened and start to caramelise. Add 1 tbsp mascarpone or soft cheese and stir until it melts into a sauce. Add chopped tarragon then serve with toasted sourdough.
