An inspirational idea for quick and easy outdoor cooking
- 1 tbsp capers
- 2 tbsp pine nuts
- 1 garlic clove
- small bunch parsley , chopped
- olive oil
- 6 chicken thighs
- 1 tbsp white wine vinegar
- string or skewers
- Mix together the capers, pine nuts, garlic, chopped parsley and some olive oil. Spread half the mix over the flesh side of the chicken thighs. Roll up, then secure with string or a skewer. Grill until the chicken is golden, crisp and cooked through.
- Rest for 5 minutes, then mix the white wine vinegar into the remaining mix and spoon over before serving.
