Squid, feta & chorizo salad

Give squid a go in this punchy restaurant-style starter, ready in minutes

Ingredients

  • 400g cleaned small squid
  • 200g sliced cooking chorizo
  • olive oil
  • 1 lemon , juiced
  • 3 good handfuls rocket
  • 150g feta cheese , crumbled

    Method

    1. Score the inside of the cleaned small squid with a criss-cross pattern, then cut into bite-sized pieces, keeping any tentacles whole. Fry the sliced cooking chorizo in olive oil until crispy, then remove with a slotted spoon and add the squid. Stir-fry for a minute.
    2. Toss the chorizo, squid and pan juices with another large glug of olive oil, the lemon juice, rocket and crumbled feta.
