Lemon & parsley butter beans

Give your meal a Mediterranean twist with this zesty, low-fat side dish

  • 1 tbsp olive oil
  • 1 large onion , sliced
  • 1 garlic clove , crushed
  • 2 x 400g/14oz cans butter beans , rinsed and drained
  • zest and juice 1 lemon
  • 1 large or 2 small bunches parsley , chopped

    Method

    1. Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final min, then stir in the beans to heat through. Add the lemon zest and juice. Stir in the parsley to serve.
