
Low-cal curries sound too good to be true? One of your favourites has just been given a healthy makeover
- 1 small onion , finely chopped
- oil
- 1 tsp turmeric
- 2 garlic cloves , crushed
- 2cm piece ginger , grated
- dried red chilli , crumbled
- 400g tin chopped tomatoes
- 200g raw peeled prawns
- 1 tbsp low fat yogurt
- Put the onion in a pan with 1tsp oil and fry gently for 5 minutes or until it starts to soften, add the turmeric, garlic, ginger and red chilli and keep cooking for a few minutes until you end up with a rough, fragrant paste. Add the tomatoes and simmer for 10 minutes, adding a splash of water if you need to. Stir in the prawns and cook until they turn opaque. Serve with rice or Indian bread, topped with a dollop of yogurt.
