Retro avocado with prawns in Bloody Mary mayo
This is one of those things that when done well is still brilliant, says MasterChef judge John Torode

Ingredients

  • 20ml vodka
  • 1 tsp horseradish , freshly grated, or 1 tsp horseradish sauce
  • small handful coriander , chopped
  • 2 tbsp tomato ketchup
  • Tabasco sauce
  • Worcestershire sauce
  • 4 tbsp good-quality mayonnaise
  • 250g cooked and peeled prawns
  • 2 Hass avocados
  • 1 lemon , juiced
  • paprika

Method

  1. Mix the vodka with the horseradish, coriander, ketchup, a shake of Tabasco and Worcestershire sauce, a good grind of pepper and a good pinch of salt. Add the mayonnaise, mix well then add the prawns and mix again. Put in the fridge to keep cool.
  2. Cut the avocados in half and pop out the stone. Sit on a plate with the hole sitting up and then pile the prawn mix in the middle. If you really want to go really 70s, serve with a wedge of lemon and a sprinkle of paprika.
